This is my version of crepe Cervette.
It's a lobster creme sauce served inside of crepes
1/2 cup white wine.
1 egg yolk
1 large lobster tail
2 large shallots
1 red bell pepper
1/2 cup whipping cream
Boil water, add thawed lobster tail. boil for 6-7 min after water boils again.
remove tail and let cool.
Grill bell pepper over open flame/gas grill til soft.
remove top and seeds when done.
chop and saute green onions and shallotsn 2 Tbsp butter.
cut bell pepper into 1/2 inch pieces.
Add bell pepper to onions
After 1 minute or so, add wine, whipping cream and egg yolk. Simmer til thickened.
Set pan aside to cool.
Place contents into blender and liquify sauce
Cut lobster tail in half, remove shell and chop into bite sized pieces
Add lobster tail to pan and add sauce from blender. Warm over mediumi/low heat
Make crepes to favorite recipe. Wrap sauce with lobster bits in crepe.
Add sauce without bits to top of crepe. Serve and be adored.
