This is a simple mac and cheese sauce that I made up.
The alchohol cooks out (for kids)
Cook rice pasta - about 2-3cups dry.
3tbsp butter
brown 2tbsp rice flower
add 1/5lb shredded goat cheddar
add 3oz soft chevre 
melt all the cheese... then
add 1/2 cup white wine
salt to taste
the wine emulsifies the cheese/butter and smoothes the sauce.

Rinse the pasta
mix pasta and sauce in large bowl. Serve.
