2.5ish lbs beef stew meat(diced, 1" chunks)
2 Yellow onions, quartered and halved
2 cans tomatoes
1 qt beef broth
3 tbsp maple syrup
salt&pepper to taste
2 cans pumpkin
1-2 cups apple cider
Heat some oil in a wok or high sided pan -medium-high
dredge meat in flour
brown meat in pan, placing in crock pot as you go
lightly brown onions in pan/wok, add to crock pot

Add tomatoes with juice to the crock pot
Add maple syrup
Add 1.5-2 cans of pumpkin to pot
Add cider, syrup, salt, pepper
Cook on high for 2-3 hours
Cook on low for 3+ hours
Enjoy. Add potatoes if you like, or make mashed or rice.
