It was a cold day and I wanted to make soup for dinner. I stumbled across this recipe and made some adjustments. My kids loved it (Which was really weird) so I wanted to write it down.

1/2 stick of butter (4tbsp)
apple cider vinegar
1 yellow onion, diced
4-6 cloves of garlic, minced
1 lb of Turkey breakfast sausage.
1.5-2 cups of uncooked brown rice
1.5-2 quarts of chicken broth (I use jar'd base)

1 15 oz can of fire roasted diced tomatoes
Salt and pepper to taste
frozen green beans (6 year old did not approve of these)

Heat up your soup pan (I use one that's easy to saute in as well) over medium-high heat.
Add in butter, onion, garlic. Saute until you've carmelized them a bit.
deglaze the pan with some apple cider vinegar
Add in the breakfast sausage, and brown it. (You should have a nice mix of sausage and onion now.
Add tomatoes, chicken stock, and beans. Bring to a simmer and season with salt/pepper.

Add rice (rinse it if you're using white rice. Brown rice lacks starch and can be directly added.

Cover and Simmer until the rice has cooked to your preference.
